Directions –
- Select sweet berries that are firm, ripe and have a good solid color.
- Wash berries, remove caps and cut into 1/2″ slices. You can also cut them in half lengthwise.
- Dry cut-side up at 130 to 140 degrees F. Use a dehydrator or dry in an oven if you are able to set the oven temperature low enough.
- Drying time depends on the size of the berry pieces, exposure to air to cut surfaces, temperature, air circulation and method of drying.
- 7 to 15 hours for slices.
- 24 to 36 hours for whole berries.
- Dried strawberries should be pliable and leathery with no bits of moisture.
- After drying, cool fruit for 30 minutes.
- Store in an air-tight or vacuum-sealed container. For longer storage, freeze.

How long does it take to dry strawberries in the oven?
Step 2 – Preheat oven to 185° (or the lowest possible setting, which may be 200°). Spread out berries on a rimmed baking sheet lined with a nonstick baking mat and bake, rotating baking sheet about every 30 minutes, until berries are darkened in color and dried out around the edges but still slightly juicy in the center, 3–3½ hours. Let cool on baking sheet.
Can I dry strawberries in the sun?

How to dehydrate strawberries – Dehydrating strawberries is fairly simple and straightforward—a great ingredient for beginners! Once your strawberries are prepped, set up your dehydrator and follow these steps:
Arrange the strawberries on your dehydrator trays. If you’re using a tray that has large holes, line it with parchment paper or, better yet, a mesh liner cut to the size of your tray. Leave space between the pieces to allow air to circulate.
Dehydrate at 135ºF (57ºC) for 6-12 hours until the strawberries are dry and leathery or crisp.
Depending on your machine, you may need to rotate the trays every so often to promote even drying.
Dehydrating strawberries in the oven: Place the strawberries in a single layer baking sheet lined with a silicone mat (this will prevent sticking). Dry in the oven on its lowest temperature setting—if possible, keep the door propped open to allow steam to escape (be careful if you have children or pets!). Flip the pieces over every hour and remove as soon as they are completely dry.

How to Store Strawberries – When stored properly in the refrigerator using one of the below methods, strawberries should stay fresh for up to one week. Always examine your berries for mold and other signs of spoilage before eating them.
Place in air-tight glassware: Transfer unwashed strawberries into a glass food storage container or mason jar and make sure it’s sealed tight. Paper towel method: Place a clean, dry paper towel in a container and put unwashed strawberries on top. Close the lid and place the container in the refrigerator. Rinse with vinegar solution: Soak strawberries in a vinegar solution (one-part white vinegar and three parts water) for a few minutes. Then drain them, pat them dry, and place them on a clean paper towel in a glass container. Loosely place the lid on and store in the refrigerator.
